I began my culinary journey in my family's Italian restaurant, La Boticella, when I was 13 years old. There, I started from the bottom and worked my way up. I learned the in's and outs of the kitchen, and saw how a community became family with delicious food at the helm. After experiencing more than 15 years of restaurant work in Rio and graduating Estacio's Alain Du Case formation cooking school, I decided to move to New York City. I wanted to pursue bigger dreams and challenge my skills working in a larger operation. Once in New York, I worked for Tom Colicchio at Temple Court, a fine dining, large scale and fast-paced setting that expanded my knowledge on the best local ingredients. From there, I took on the role of Executive Chef at Berimbau in the West Village, followed by Ipanema in Midtown. I entered each project as a consultant and Executive Chef. Both gave me an opportunity to curate menus and experiences that fostered a local appreciation for Brazilian flavors. In less than one year, Ipanema was awarded a spot on the Michelin Guide. Each experience allowed me to build connections with talented individuals within NYC's restaurant community. Now, I am looking forward to bringing a unique, restaurant-quality experience to you, or help you create your own restaurant vision -- wherever your community is.
Throughout this 22 years of career. I had the possibility on working in different projects. Fine dining restaurants. Consulting for restaurants and bars. Developing equipment schematics and design. designing better ways for restaurants to optimize space, food cost and operation work flow. Private events for companies and private chef for families.
